Valerie’s Strawberry Omelet

 

3  Extra large eggs
¼ Can Eagle Brand Condensed Milk
1  Tablespoon Sour Cream
Splash of Water

2  Cups mild cheddar cheese – grated
3  Tablespoons of whipped cream cheese
1  Bunch of green onions – chopped – green only
1  Large avocado – sliced thick
3  Thick slices maple bacon, cooked crunchy – crumbled
6  Large strawberries – sliced  (frozen ok)
6  Large sliced white mushrooms – pre sauteed
4  Large tablespoons sour cream
6 Grinds Pepper
1  Tablespoon Butter

Valerie's Strawberry Omelet
 

Prep all ingredients starting with cheese and set aside.  Preheat omelet pan and add tablespoon butter and coat pan.  Whip together eggs, Eagle Brand, Sour Cream and water.  Add egg mixture to prepped omelet pan and cover (glass/see through cover preferred) on medium-low heat.  When eggs fluff and rise, begin layering. 

1/3 of cheddar cheese
sautéed mushrooms
cream cheese
green onions
1/3 of cheddar cheese
crumbled bacon
Avocado
1/3 cheddar cheese

Fold both edges inward.

Slide out of pan and onto platter
Sour cream all along top and strawberries on top of sour cream and enjoy!!!
